End of Winter Pasta by Andrew Carmellini

It’s still high summer, but our cravings have a mind of their own. Locanda Verde chef Andrew Carmellini’s pasta recipe is inspired by Friuli, the cold, mountainous region where his nonna was born. You can use any dried pasta (spaghetti, rigatoni, penne), but he likes Pasta Fiorentini, because it catches bits of goodness in every bite.
