All up in Your Grill
James LoCascio’s Foolproof Marinade

Symptoms: Sweating, coughing, confusion, bad taste in mouth.
Diagnosis: Failed attempt at a summer barbecue.
Prescription: A home remedy from James LoCascio of Barclay Prime.
Want your meats to taste meatier, your fish to grill swimmingly? Throw together this go-with-anything, foolproof Mexican marinade. (The recipe below is enough for two average portions.)
Ingredients:
1 T. each chopped parsley, tarragon, chives, rosemary, and cilantro
1 T. olive oil
1 T. grapeseed oil
Zest of one lime
Directions:
1. Combine all ingredients.
2. Rub into meat or fish. (Gently!)
3. Grill.
