Great-Aunt Agnes’s Blueberry Loaf Recipe

Great-Aunt Agnes makes a mean coffee loaf. In order to get this secret recipe from her, we had to make an anonymous phone call and threaten her life. And you know what? It’ll help you tomorrow morning.
Blueberry Coffee Loaf
Makes four loaves
Ingredients
6 eggs
4 c. sugar
1 ½ c. milk
8 c. flour
10 tsp. baking powder
1 ½ tbsp. cinnamon
2 pts. fresh or frozen blueberries, thawed
1. In a large bowl, mix eggs and sugar. Add milk and mix.
2. Combine flour, baking powder, and cinnamon in a separate bowl and stir into egg mixture.
3. Fold in berries.
4. Spoon into four greased and floured loaf pans. Bake at 350° for about one hour or until the centers are firm.
5. Cool, sprinkle with powdered sugar.
6. Eat some now and save some for later. Just reheat in the oven and serve warm with cream cheese or butter.
