Like this perfect-for-fall quinoa porridge with apple compote. It’s listed as a breakfast in the book, but we might eat it as a hearty afternoon snack.
Quinoa Porridge with Apple Compote
Makes one four-ounce serving
Ingredients
½ c. quinoa
½ c. apple juice
½ c. orange juice
1 sweet apple (such as Gala or Fuji)
¼ c. blueberries
1. In a saucepan, slowly cook the quinoa (10-12 minutes) with the juices, stirring occasionally.
2. Meanwhile, steam the apple.
3. Peel the apple and blend it in a food processor. Add blueberries and puree lightly.
4. When quinoa is ready, top with the fruit compote, and serve.
