Apply online for a two-week gig, then wait patiently to bring your concept to life in the twenty-seat space (it’s booked through January). BYO groceries; everything else, including the kitchen sink (and hostess, sound system, cashier, dishwasher, and liquor license), is included. There’s even an impressive equipment list to play with.
If the fire’s too hot, don’t mess with the kitchen. Take a seat instead: Concepts and cuisine vary by chef, so the menu changes at least biweekly (from Spanish paella to carne alla grillia).
No matter who’s wearing the apron, it’s a good deal.
