What: Jim Lahey of Sullivan Street Bakery fame unveils his secret recipe ($18) for no-knead dough that produces the ideal crust (via electric or gas oven) in less than five minutes.
Why: Tons of additional recipes, including corn and tomato pie with bechamel, chili flakes, and basil; and garlic scape and lovage pesto toasts.

What: Flaky, not-too-sweet Eastern European bread ($27-$285) with tissue-thin layers smothered in such flavors as blueberry cream cheese, English walnut, and poppy seed.
