Ice Cream Cookbook Battle: Bi-Rite Creamery Versus Humphry Slocombe

Two kingdoms face off

In our land of artisan scoopage, the lines of allegiance are fiercely drawn between Bi-Rite Creamery and Humphry Slocombe.

The houses take to the battlefields with respective tomes out this month: Bi-Rite’s Sweet Cream and Sugar Cones (released today) and Humphry Slocombe Ice Cream Book (coming April 25).

From the northern kingdom, Bi-Rite founders Anne Walker and Kris Hoogerhyde pillage with chapters by flavor and time-tested techniques, putting forth 90 recipes from their queue-creating shop (salted caramel makes a royal appearance). Lords Jake Godby and Sean Vahey of Humphry Slocombe (along with Paolo Lucchesi) knight 40 concoctions (Secret Breakfast included) and a dozen toppings, interweaved with twisted musings from the dungeons.

We’re taking the eunuch route by leaving the embattlements to the masses, but we’ll set up the tournament with entries from each: Malted Vanilla and Blue Bottle Vietnamese Coffee, take to your steeds.
