Peanut Butter Creme Cookies Recipe

Prepare for the inevitable mass-produced candy overload with an alternative that’s just as sweet. Whip up Nutter Butter-inspired treats (minus the junk) from local gal Lara Ferroni’s new book, Real Snacks.

Peanut Butter Creme Cookies
Makes fifteen to twenty

Ingredients
8 tbsp. unsalted butter, at room temperature, divided
½ c. unsweetened creamy peanut butter, divided
½ c. powdered sugar
½ c. white spelt or white whole-wheat flour
¼ c. oat flour
½ tsp. baking powder
¼ tsp. baking soda
¼ tsp. salt
2 tbsp. honey
2 tbsp. coconut or cane sugar
1 egg white
½ tsp. vanilla extract

1. Line two baking sheets with parchment and set aside.

2. In the bowl of a stand mixer fitted with the paddle attachment, beat 4 tbsp. butter, ¼ c. peanut butter, and powdered sugar until smooth, about 1 minute. Transfer the cookie filling to a small bowl and set aside.

3. Sift the spelt flour, oat flour, baking powder, baking soda, and salt together, and set aside.

4. In the same mixer bowl as before, beat 4 tbsp. of butter, ¼ c. peanut butter, honey, and sugar until creamy, about 1 minute. Add the egg white and vanilla and beat on medium-high speed until light, about 2 minutes. Add the flour mixture and mix on low speed until well blended.

5. Preheat oven to 350°.

6. Fill a cookie press with your choice of cutter disc and chill for 30 minutes or up to 2 hours. Press out cookies onto prepared baking sheets, leaving at least 1 inch between cookies. (If you don’t have a cookie press, you can cover the dough with plastic wrap, chill, and scoop out teaspoon-size rounds; flatten each round with the bottom of a cup.)

7. Bake until the edges are golden, 5-10 minutes, rotating the baking sheet halfway through baking. Cool completely on a wire rack before filling.

8. Spread the reserved cookie filling on the flat sides of half the cookies and top with the remaining cookies.
