Coast-hopper Kacie Loparto spends her days tangled up in superfood: She harvests and hawks the nutrient-dense algae (rich in potassium, B12, iodine, and vitamin A) through her company, She Sells Seaweed.

Below, she shares a recipe for an easy snack — a healthful salad starring wakame (a.k.a. the green bits floating in your miso soup).

She Sells Seaweed’s Wakame and Cucumber Salad
Serves four to six

Ingredients
2-3 tbsp. rice vinegar or red wine vinegar
¼ c. olive oil
1 dash sesame oil
1 tsp. honey
1 tbsp. citrus juice
1 tsp. fresh-grated ginger
1 dash sea salt or soy sauce
1 dash cayenne
¼-½ oz. wakame (available at She Sells Seaweed)
2 cucumbers
2 scallions, chopped
2 tbsp. sesame seeds

1. To make the dressing, whisk together the first eight ingredients.

2. Soak wakame in hot water until softened, at least 30 minutes. Drain and slice into long, thin strips.

3. Peel cucumbers, then halve them lengthwise and scoop out seeds. Thinly slice into half-moon shapes.

4. Toss cucumbers with wakame and dressing.

5. Garnish with scallions and sesame seeds.
