Your pilots: husband-and-wife team of executive chef Rick Hackett of San Francisco’s MarketBar and front-of-house manager Meredith Melville.

First-class menu: spans a range of South, Central, and North American countries with such dishes as fried frigatello peppers sprinkled with pink sea salt, Yucatan seafood stew, organic chicken a la plancha, and lomo steak with chipotle-mushroom sauce.

In-flight entertainment: grand waterfront views from a vintage 1920s ice house restored in vibrant hues, complete with concrete columns, a spacious patio, and recycled and sustainably harvested materials like stone and tile.
