In homage to Charles Phan’s latest Out the Door (opening for breakfast tomorrow), we invoke the four classical elements.
Fire
Phan’s old flames (grapefruit-and-jicama salad) flirt with breakfast (poached eggs with braised beef brisket, or beignets with Vietnamese coffee, powdered sugar, and condensed milk). Com Phañ, a new rice dish that combines shredded pork shoulder with pickled veggies and spicy fish sauce, sparks devotion.
Water
Meals go swimmingly with several vinos on tap.
Wind
Pastry chef Chucky Dugo’s desserts (chocolate cake with cardamom cream and gray salt, or warm banana rice pudding with toasted coconut cream) are a breath of fresh air.
Earth
Designer Olle Lundberg mixed raw materials (steel banquettes, a shaved-off boulder that serves as a host stand, slate floors) with warmer elements (midcentury modern chairs).
Might as well be heaven.
