Despite our lofty local food politics, a grilled cheese made with Kraft singles on buttered white bread is, frankly, kind of unbeatable.

Until now. The artisanal versions at The American Grilled Cheese Kitchen, opening today after much anticipation in South Park, are so good they might even trump that nostalgic perfection (one of the owners of this ecofriendly, quick-service restaurant is a Grilled Cheese Invitational champ, so there’s expertise in the house).

Try the classic Mousetrap (sharp cheddar, Havarti, Jack) or inspired combos like the Jalapeno Popper (chèvre, Jack, thick-cut bacon, apricot-jalapeno relish) and Piglet (sharp cheddar, smoked ham, apple mustard, rosemary butter).

Cut the richness with tart house-made sodas (spicy pomegranate) or beer and wine from a concise list. There are a few breakfast sandwiches in the works — which might be the best thing since sliced bread.
