When Michael Recchiuti first put lavender and Earl Grey in his chocolates, it was revolutionary. Now chocolatiers are adding everything but the kitchen sink to their cocoa creations.
To wit: Michael Mischer’s new barbecue truffles, seen here.
The Oakland-based confectioner infuses local restaurant Everett & Jones’s hot barbecue sauce into a dark chocolate ganache, then coats it in his signature Venezuelan dark chocolate. The result is a hits-you-a-minute-later smokiness and tang that balances the cocoa flavor. Think of it as a savory alternative to the average truffle.
And if you need a post-barbecue dessert, well, he’s got apple pie filling, too.
