If our names determined our lots in life, any Hooker would’ve been screwed from the get-go.
But for Josey Baker, it’s fortuitous: He bakes artisan bread and sells it, CSA style, at a few local locations.
The self-taught bread-maker uses the same sourdough starter to make eight loaves: olive levain, seed feast (pumpkin, flax, sunflower), and cranberry-walnut whole wheat — to name a few. Customers order online and pick up the boules on designated nights (and it may be at Bi-Rite in the coming weeks). Baker also has his sights set on bicycle delivery, which he’ll test out for Thanksgiving orders.
Being a purist, he uses organic ingredients whenever possible and suggests eating his bread on its own or with just a light slathering of butter.
In other words, don’t f@#k with a good thing.
