Chocolatier Mary Loomas has something of a dark side, working with a wickedly rich 71 percent cacao base for most of her signature truffles and bars (like the chock-full-of-nuts Jardin du Chocolat) and using lots of local ingredients, including farm-fresh fruit, to boot.
