Barbecue may be synonymous with summer, but when brisket beckons, you answer — no matter the season.

Get your buns to Ballard’s new Bitterroot BBQ, where owners Grant and Hannah Jo Carter serve the tender specialty in a rustic setting (reclaimed wood, exposed brick) for both lunch and dinner.

Whole smoked chickens, pulled pork, and ribs all make tasty appearances. Meats are dry rubbed and served sans sauce (diners can choose from varieties like mustard and classic sweet at their tables). Sandwich options arrive on pretzel rolls from nearby Tall Grass Bakery.

At the bar, patriotic patrons quench their thirst with Southern sweet tea and a slew of American brews, bourbons, and whiskeys.
