Chicken and Lettuce Wraps Recipe for Hawks Fans

Make this Asian-inspired dish for kickoff

Just because Seattle is about to destroy Denver doesn’t mean you have to call a time-out on healthy eating this weekend.

Miller’s Guild chef Jason Wilson shares a Super Bowl recipe full of protein and greens, with a little kick.

Nuoc Cham-Style Chicken and Lettuce Wraps
Makes four wraps

2 5- or 6-oz. organic or natural chicken breasts
3 tbsp. lime juice
¼ c. fish sauce
1 tsp. chopped ginger
1 clove garlic, smashed
2 tbsp. chili-shrimp paste
½ c. shiitake mushrooms, sliced thin
2 tbsp. chili oil with sesame
½ bunch cilantro
½ bunch Thai basil leaves
½ cup mango, diced
1 c. pea shoots
1 c. enoki mushrooms
1 head butter lettuce

1. Simmer chicken in a saute pan with lime juice, fish sauce, ginger, garlic, and chili-shrimp paste, until fully cooked and tender.

2. Cool the chicken and adjust seasoning as needed.

3. Add the shiitake mushrooms to a saute pan with the chili oil with sesame and salt, and saute until crisp on all sides.

4. Mix cilantro, Thai basil leaves, mango, pea shoots, and enoki mushrooms and place in butter lettuce cups.
