If yet another cupcake shop opens in the big city, and nobody is around to hear it, does it still make the sound of an overblown baked goods trend?
We don’t know, because we got distracted by the next big thing in retro sweets: West Seattle’s adorable new bakery, Shoofly Pie Company.
Just opened by Martha Stewart clone Kimmy Hsieh Tomlinson (who studied at the Institute of Culinary Education in NYC), the cozy spot is the holy grail of pies, serving delicate ham and Gruyere quiches; crumbly fruit pies; and ’50s-era cream creations with flaky, all-butter crusts and natural ingredients.
Thick slices of apple, key lime, or the namesake Shoofly (made with brown sugar and molasses) come a la mode or Seattle style (there’s an espresso bar, of course). Distressed wood floors and cheery yellow and lime decor make the place cute as, er, pie.
And the perfect location for a trend that’s still blessedly half-baked.
