Abstract: This report discusses Ballard’s Lunchbox Laboratory, an ambitious experiment in retro-American comfort food with a twist.
Materials: Paprika-colored walls, shelves packed with vintage lunch boxes and old toys, a highly developed sense of humor.
Method: Totally over fine dining, chef/owner Scott Simpson (Fork) and wife Allegra (Kathy Casey Food Studios) have joined forces in a super-casual joint.
Hypothesis: Customers will flock to the Laboratory for kielbasa corn dogs, rosemary and salt-cured chicken wings with green Tabasco fondue, and witty takes on compartmentalized TV dinners. Sugar addicts will go wild for seasonal milkshakes and s’mores cheesecake. Brunch-goers may never leave the heated patio after one homemade beignet.
Conclusion: They’re shooting for a Sunday opening; periodic fights for tables will ensue.
