After traveling to Moscow and the Mediterranean, owner Rick Baker found Seattle’s lack of authentic falafel and shawarma a major downer. So he created a kitchen on wheels.

The man sure can cook: Pillowy pitas get stuffed with moist falafel, sizzling lamb, or beef — then they’re loaded up with extras like Russian beet relish, zucchini tomato spread, cabbage slaw, sauteed peppers, and homemade tzatziki.

It’s the kind of food that’s equally good whether you’re sober or sloshed.

Making it one of your most favorite things.
