Fresh Bistro Opens

Franchises, big boxes, McMansions: all developments you’d rather not pop up on your block.

But a comfort bistro that serves budget-oriented plates with gourmet gusto? Sound herban planning calls for such expansion.

Especially when the enterprise stems from catering company Herban Feast. Opening today, Fresh Bistro has a mouthful of textures, clashing hot and cold seasonal ingredients, and global flavors in store for its West Seattle neighbors.

Executive chef Dalis Chea (Le Cordon Bleu grad and Canlis alum) expertly dishes out oxtail bourguignon, shiso-crusted honey pecan prawns, and green olive pecorino halibut, followed by basil crème brulee with balsamic-glazed cherry tomatoes for dessert.

The rustic space includes an open kitchen, exposed wood, and leather chairs. There’s even outdoor seating enclosed by planters of edible flowers.

Or what we’d call good growth.
