As a citizen of the world (or a regular at the world’s tables), you seek out the perfect pico de gallo, leave the beaten path for Korean bulgogi, and sop your buns in soy.
Now there’s a driving force that’ll bring it all together: Marination Mobile, the fusion-friendly taco truck rolling into Fremont today. (Don’t fret: It’ll also be hitting Capitol Hill, SoDo, and Ballard.)
The nomadic Korean-Hawaiian cuisine includes kalbi tacos with meat steeped in a salty garlic-citrus marinade, kimchi fried rice, kalua pig, miso ginger chicken, and Spam sliders. Each goes down like a day at the beach.
And is just the kind of cultural combo to soak up this summer.

I've been trying to find a way to make direct contact with the chefs in the marination mobile - to no avail, I'm afraid. Can anyone here comment as to whether any of their recipes make use of "pressure infusion marination" technique? Google for it if you are not familiar with it. It's a process for speeding up the flavor infusion side of the equation.
