When it’s big flavor you seek, visit Golden Beetle, a new Egyptian restaurant from lauded chef Maria Hines inspired by the foods of Lebanon, Greece, Morocco, and Tunisia. Besides collecting top-notch accolades (James Beard, Food & Wine), Hines sources high-quality ingredients that are Oregon Tilth Certified Organic (just like at her first restaurant, Tilth).

Claim a cozy corner and prepare to share amid glowing lanterns and exposed ductwork. At the table, it’s street food and small plates. The fruits of her idealism and hard work include the likes of lamb tagine with couscous, basil-fed snails in broth, and unusual cocktails (Beirut Fizz, Lion’s Milk Swizzle) crafted with house bitters and sodas.

The restaurant’s name (an aphrodisiac in the 27-spice blend ras al hanout) is an homage to the complexities of the North African palate.
