Pour Yourself into Studies at Dolcezza’s New Factory

A gelato shop/coffee lab that’s worthy of Wonka

For ten years husband-and-wife team Robb Duncan and Violetta Edelman have made more than 300 flavors of Argentine-style gelato in a Georgetown basement. With four stores and more than 120 restaurants to supply, they were in danger of a meltdown.

Thankfully, they’ve opened Dolcezza Factory in an industrial building one block from Union Market.

The new facility has ten times more production space than the team’s old spot, including room for a coffee lab where baristas can host cuppings and classes using Stumptown beans. The stools provide a view of the entire gelato-making process: the arrival of fruit, nuts, and cream from local farms, and the extrusion of seasonal flavors like crookneck pumpkin, sweet potato pecan praline, and clementine.

Starting in March, Dolcezza’s fresh gelato will be available as artisanal soft-serve. The factory is set to be a Willy Wonka paradise for grown-ups.
