Ingredients
1 oz. Busnel Calvados (another Calvados or cognac will do)
¼ oz. Batavia-Arrack van Oosten
½ oz. Carpano Antica Vermouth (Martini & Rossi or Dolin works, too)
¼ oz. fresh lemon juice
½ oz. spiced syrup — a combination of orgeat (almond syrup), cinnamon-bark syrup, Velvet Falernum, and St. Elisabeth Allspice Dram
1 egg white
St. Louis Framboise Lambic
1. Dry shake all ingredients except the Lambic to emulsify and whip.
2. Add ice and 2 oz. St. Louis Framboise Lambic.
3. Shake again; then strain into a cocktail glass.
4. If you’re feeling crafty, create a latticework stencil out of paper and place over the top of the glass. Put Angostura bitters in a spray bottle and give the stencil a spritz over the foam.

To make simple syrup: Mix 2 parts sugar and 1 part water on the stove over low heat. Throw in toasted allspice and cinnamon. Let it sit overnight; then strain out spices.
